I came across this recipe for Raw Chocolate Chia Energy Bars in the January issue of Vegetarian Times magazine. It sounded very similar to Lärabars, which are one of my favorite on-the-go snacks!

Ingredients
- 1 1/2 cup pitted dates
- 1/3 cup unsweetened cocoa powder
- 1/3 cup whole chia seeds
- 1/2 tsp vanilla extract
- 1/4 tsp almond extract
- 1 cup slivered almonds


Puree dates in food processor until a thick sticky paste forms.


Add cocoa powder, chia seeds, vanilla extract, and almond extract. Process until well combined.


Add almonds and blend until well chopped and distributed. Transfer mixture to wax paper and mold into a rectangle or press into a loaf pan to easily create a rectangular shape. Wrap in wax paper and refrigerate overnight. Remove from fridge and cut into bars. Wrap bars individually for storage.
This recipe was extremely simple and the results were great, if not better than store-bought bars! They are sweet, crunchy, and nutrient dense – the perfect snack!

I made these for a delicious healthy snack to nibble on during the Bear’s game tonight! Over the weekend I soaked and cooked a bunch of dried garbanzo beans in preparation for this recipe, but you can just as easily use canned beans for convenience.
Ingredients:
- 2 cups garbanzo beans
- 1 Tbsp olive oil
- 1 tsp spice mixture
- 1 tsp salt
The spice mixture is a combination of:
- 2 tsp ground cumin
- 1/2 tsp chili powder
- 1/2 tsp paprika
- 1/2 tsp cinnamon
- 1/2 tsp ground allspice
- 1/4 tsp ground ginger
- 1/4 tsp cayenne pepper
- 1/8 tsp ground cloves

Combine beans, oil, salt and spices in large bowl. Stir to coat. Spread on baking sheet and bake at 350 degrees for 40-50 minutes. Allow to cool a bit on pan to increase crispiness. Sprinkle with a pinch more of salt if desired. Eat plain or combined with your favorite nuts or snack mix!

After jealously drooling over everyone’s Green Monster smoothies I finally had the guts to make my own! I stuck with the very basics: fresh spinach, a frozen banana, and vanilla soymilk.
I loaded it all into my Magic Bullet and voila! Suprising REALLY tasty! It made for the perfect dessert to some leftover pasta for dinner. Now that I was finally brave enough to try it, I can’t wait to experiment with different combinations!Enjoy this post? Share it with your Facebook friends!

This weekend I picked up some Peanut Butter & Co Dark Chocolate Dreams Peanut Butter.
It looked fun and unique, so I couldn’t resist. All I have to say is YUM! This stuff is heaven on earth, it tastes just like a Reese’s Peanut Butter cup!
It’s great to spread on bananas or as an ice cream topping! The perfect blend of peanut butter and chocolate makes this peanut butter extremely addicting!

For a sweet after lunch treat, I had some Smartfood Popcorn Clusters that are recently a new item at Jewel!
I bought a box of five mini snack packs to take around to class to with me.
These snacks were great, not too high in calories and a good source of fiber!
Plus they have no weird ingredients!
