Continuing with my love for Bob’s Red Mill products, I decided to try the 13 Bean Soup Mix this weekend to make a delicious winter chili.
Beans should be a staple in everyone’s diet. They are high in fiber, loaded with protein, and have no cholesterol. Bob’s Red Mill 13 Bean Soup Mix contains a mixture of navy beans, black beans, red beans, pinto beans, baby lima beans, large lima beans, garbanzo beans, red lentils, great northern beans, kidney beans, black-eyed peas, yellow split peas, green split peas, and lentils. There is no seasoning added to this bean mix so you can use it to make any recipe you’d like!
Ingredients
- 3 cups Bob’s Red Mill 13 Bean Soup Mix
- 1 yellow onion, chopped
- 4 garlic cloves, minced
- 2 8oz cans tomato sauce
- 1 6oz can tomato paste
- 3 cups kale, chopped (optional)
- 2 Tbsp chili powder
- Salt and pepper to taste
Soak beans overnight. Place beans in large saucepan and cover with water. Simmer for 2 hours until beans are soft. Add tomato sauce, tomato paste, onion, garlic, kale, and spices. Simmer for 1 hour. You can also add ground beef to this recipe if desired. Serve with this killer corn muffin recipe and enjoy on a cold winter day!
I am still contemplating what to make with all of the extra beans I soaked. Any ideas?

For a sweet after lunch treat, I had some Smartfood Popcorn Clusters that are recently a new item at Jewel!
I bought a box of five mini snack packs to take around to class to with me.
These snacks were great, not too high in calories and a good source of fiber!
Plus they have no weird ingredients!

Trying to get a healthy dose of omega-3 fatty acids but sick of dealing with fish oil capsules everyday? Flaxseed is the perfect alternative!

Flaxseed also contains DHA (docosahexaenoic acid), which is an essential compound for brain function and has a natural mood boosting characteristic!
Flaxseed comes in both brown and gold varieties, both of which have beneficial and nutritious characteristics. Flaxseed can be found at just about any grocery store today. Look for ground flaxseed because it is more easily digested by the body. Be sure to refrigerate flaxseed after opening to prevent the natural oils from going rancid.

Chia is back! But not in the form of a sprouting green clay animal. Believe it or not, the seeds used to grow such plants are a great dietary supplement! Chia seeds are extremely high in omega-3 fatty acids, fiber, protein, antioxidants, calcium, and a number of vitamin and minerals!
The Chia plant is native to Mexico and is grown commerically for its seeds. Chia seeds are a nutty-tasting, gluten-free whole grain and can be eaten a number of ways. You can eat chia seeds raw by tossing them into anything from salad and soups to yougurt, oatmeal, and smoothies. They can also be ground up and used in baking recipes or soaked in water to give them a gelatinous texture.
By adding just 2 tablespoons of chia seeds to your daily diet you can reap its numerous health benefits; 2 tablespoons provides you with 7g of fiber, 4g of protein, and 5g of omega-3 fatty acids.
Chia seeds are similar to flaxseed but they do not require grinding for digestion and they do not go rancid as quickly as flaxseed. These little seeds are full of healthy fat, protein, and fiber, and are considered a superfood! They have been found to lower blood pressure, help regulate blood sugar, and even give you energy!
