Last night I had a dinner date with the girls! We had the most incredible dinner cooked by the one and only Jessica in her new apartment!

The menu included a tomato, basil and mozzarella salad, grilled chicken breast wrapped in prosciutto,

Asiago cheese risotto, grilled zucchini, and fresh fruit with homemade whipped cream for dessert!

We gathered around the coffee table in the living room with a bottle of wine for a fabulous night of laughs and great eats!

Last night I went to one of the many summer festivals going on around Chicago, the Lincoln Avenue in the Lincoln Park neighborhood. The festival featured local bands on five different stages as well as over 200 vendors offering food, beer, art, and carnival games. Despite the 90 degree weather, the festival was a lot of fun and a great spot to people watch and meet up with friends!

At the festival I picked up a quick dinner: a glass of cold sangria and a 10” Italian sausage! With the smell of summertime grilling in the air I could not pass up the vendor cooking up these Italian sausages!

But it sure was delicious and well worth the stares from the crowd. Topped with green peppers and onions, I couldn’t have asked for a better summertime dinner. Of course I was only able to get about half way through it before passing it off to the boyfriend, but nevertheless, it was amazing!

Sunday night was the perfect night to grill out here in Chicago! I had put a slab of ribs in the fridge to marinade Saturday afternoon, but this was not your typical marinade. Per a recipe in Cook This Not That, I used Dr. Pepper soda to marinate my ribs! I thought this was such a clever and unique idea that of course I had to try it!

Here’s what you do:

Ingredients:

  • 1 slab baby back ribs
  • 1 (2 liter) bottle Dr Pepper (I used Diet)
  • salt and pepper
  • 1/2 tsp chili powder
  • 1/2 cup water
  • 1/4 Tbsp canola oil
  • 1/4 onion, minced (I used 3 purplette onions from the farmers market)
  • 1 garlic clove, minced
  • 1/2 cup ketchup
  • 2 Tbsp Worcestershire sauce
  • 2 Tbsp apple cider
  • 1/8 tsp cayenne pepper

Place ribs in a deep baking dish and pour enough soda over them to cover (save at least 1/2 cup for barbeque sauce). Add 1/8 cup salt and soak overnight. Preheat oven to 350*F. Remove ribs, pat dry, and sprinkle with chili powder. Discard marinade and return ribs to empty baking dish, cover tightly with foil, and bake for 2 hours.

To make the barbeque sauce heat oil in a skillet, and sauté onion and garlic until soft. Add ketchup, Worcestershire sauce, vinegar, cayenne, and 1/2 cup soda. Simmer for 15 minutes until sauce thickens. If you do not want to make your own barbeque sauce you can just as easily use a store bought one instead to save time.

Heat grill. Brush ribs with barbeque sauce and grill for 10-15 minutes, rib side down. Flip over and cook other side until lightly charred and smoky. Remove from grill and brush with more sauce before serving. I used up all of my sauce before grilling so had to use some extra store bought barbeque sauce for the last step. Next time I might double the sauce recipe to ensure I have some left over!

I served the ribs with some grilled corn, chips and fresh salsa made earlier that afternoon, and some homemade baked beans (see recipe below). The beans were fantastic, I couldn’t get enough of them! This recipe of course was derived from a recipe in Cook This Not That! I’m telling you, this book has it all!

Ingredients:

  • 4 strips turkey bacon, chopped into small pieces
  • 1/2 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 can pinto beans, rinsed and drained
  • 1 can cannellini beans, rinsed and drained (you can also use 2 cans kidney beans instead)
  • 1 cup beer (a dark beer is preferred but if all you have on hand is light, that will work too!)
  • 1/4 cup ketchup
  • 1 Tbsp chili powder
  • 1 Tbsp brown sugar
  • Pinch of cayenne pepper

Cook bacon over medium heat until crispy. Add onion and garlic and sauté until translucent. Stir in beans, beer, ketchup, chili powder, brown sugar, and cayenne. Simmer until sauce thickens (about 15 minutes).

In attempt to incorporate more fish into my diet, I’ve decided to dedicate one weekend night dinner a week to fish! Las night I made a summery version of Mahi Mahi fish tacos on the grill topped with mango salsa! If you don’t have mangos on hand feel free to use peaches or pineapple instead!

Ingredients:

  • 1 mango, peeled, pitted and cubed
  • 1 avocado, peeled, pitted, and cubed
  • 1/2 cup red onion, chopped
  • juice from 1 lime
  • chopped fresh cilantro
  • salt and pepper
  • Canola oil
  • 2 mahi mahi fillets
  • 1 Tbsp blackening spice
    • 1 tsp cumin
    • 1 tsp paprika
    • 1/2 tsp cayenne
    • 1 tsp oregano
    • 1/2 tsp pepper
    • 1/2 tsp salt
  • 4 corn tortillas

Mix mango, avocado, onion, and juice from lime in bowl. Season with cilantro, salt, and pepper. Let sit in refrigerator until meal is ready. Heat a grill or grill pan until hot. Coat fish with oil and blackening spice rub. Cook fish on grill for 4 minutes on each side. Warm tortillas on grill or in the microwave to make pliable.

Divide fish among tortillas and top with mango salsa. Serve with lime wedges for garnish.

These tacos were so flavorful! I don’t know why I don’t make fish more often; I’m so glad I decided on it for dinner! Since summer is finally here (despite the rainy weather this past week in Chicago) I love trying out new recipes on the grill! I’m off on a bike ride to the Pilsen Farmer’s Market this morning with a friend; stay posted to updates!

If your life is anything like mine then you know that Mondays can be rather hectic! After getting home from work at 8:30pm starving and sticking with my “finding time for everything” mentality, I threw together a quick dinner. This dish is the perfect example of how you can combine convenience items with fresh ingredients to make a healthy and quick meal; not to mention how a well stocked kitchen can make cooking any cuisine a breeze!

I got this recipe from Cook This Not That! I cannot stress enough how much love I have for this book; all of the recipes are quick, simple, and absolutely delicious! I never thought that this would be my “go to” recipe book, but with such a great variety of recipes and mouth-watering pictures, I have yet to be disappointed by a recipe in this book!

Ingredients:

  • 2 packages frozen chicken or vegetable potstickers (I used Annie Chun’s Organic Chicken & Vegetable Potstickers from Whole Foods)
  • 2 cups fresh sugar snap peas
  • 4 oz shitake mushrooms, sliced (I buy dehydrated mushrooms since they have a longer shelf life; simply soak them in warm water for 30 minutes and you’ve got fresh mushrooms!)
  • 1 Tbsp sesame oil
  • 1 Tbsp soy sauce
  • 1 Tbsp rice vinegar
  • 1 tsp sesame seeds

Boil a large pot of water. Drop potstickers in, boil for about 5 minutes, and drain. In a large skillet heat sesame oil. Add mushrooms and cook for about 3 minutes. Add potstickers and cook for another 5-10 minutes until potstickers brown. Add snap peas and cook for another 2 minutes to warm them up. Remove from heat and add soy sauce, rice vinegar, and sesame seeds. Makes 3-4 servings in a record time of 20 minutes!
