1. Where do you get all of your recipes?
I get my recipes from How to Cook Everything Vegetarian by Mark Bittman, The New Moosewood Cookbook by Mollie Katzen, and The Best of Cooking Light by Hollie Contri Johnson. I get a lot of my recipes from health magazines including Vegetarian Times, Diabetic Living, and Taste of Home: Healthy Cooking. You can actually get a lot of really good recipes from vegetariantimes.com, cooklight.com, tasteofhome.com, and diabeticlivingonline.com. I am always on the lookout for new and fun recipes, so feel free to send any good ones my way!
2. How much saturated fat should I eat each day?
Your saturated fat intake should not exceed 7% of your daily calories. For example, if you consume 2,000 calories a day, no more than 140 of those calories should be from saturated fat. One gram of fat is 9 calories. Therefore 140 calories of fat is equivalent to 15 grams of saturated fat (140/9 = 15).
3. Are you a registered dietitian?
No, I am not a registered dietitian, but I will be in next year when I finish my internship and Masters degree.
4. What kind of camera do you use?
I use a Kodak EasyShare LS743. I bought this camera back in 2004 and cannot wait to replace it! But for now, it does the job.
5. Do you take a multivitamin?
I don’t take a multivitamin as often as I should because they tend to upset my stomach, but when I do, I take Women’s One A Day.
6. Are you a vegetarian?
I try to eat as many vegetarian meals as I can, however I do incorporate lean meats such as chicken and turkey into my dishes. When I do include meat, I choose it carefully to ensure the animals were grass-fed, free-range, and not given any antibiotics or growth hormones.
7. How often do you work out?
I try to do some form of exercise everyday. I am currently training for the Chicago Rock ‘n’ Roll Half Marathon and am following a training schedule to prepare myself for the race.
8. Do you participate in any races?
I have run a number of 5K races in the past for fun including ones for AIDS, Arthritis, and Leukemia. As mentioned above I am currently training for my very first half marathon!
9. Do you use a heart rate monitor when you work out?
I have a pink Polar F6 Heart Rate Monitor and I absolutely love it! It motivates me to push myself when I work out and keep track of the calories I burn.
